Easy Vegan Blueberry Muffins!

While I was visiting my mom the first day I made this blog, she cooked us some blueberry cupcakes! Neither of us had eaten a cupcake in a very long time but we are very healthy people so we put blueberries instead of traditional cupcake fare.

We actually used organic cupcake mix from Arrowhead Mills. We normally would use whole wheat or oat flour for health benefits but she found this mix and wanted to try it out (the first ingredient is organic unbleached whole wheat flour so it's still healthy). She made some in wrappers and some she just put directly into a heart shaped pan sprayed so they wouldn't stick. We found that the ones without wrappers were better because the paper stuck to the cupcakes.


Ingredients:

Arrowhead Mills Bake With Me Organic Cupcake mix
1 cup fresh of frozen blueberries
